Labneh (leben) was made from (i) cow milk or (ii) buffalo milk or from recombined milk prepared by adding (iii) anhydrous milk fat, (iv) maize oil, (v) soyabean oil, (vi) palm oil or (vii) sunflower oil at 3% w/v to reconstituted skim milk; the milks were incubated at 40 degrees C with yoghurt culture until pH 4.4 was reached, then salted at 0.5% w/v, drained and stored at 6 degrees C for 3 wk.
