Advantages of foods not requiring refrigeration are discussed, with special reference to the situation in developing countries; the importance of the hurdle concept (i.e. treatment involving additive/sequential action of a series of relatively mild microbicidal/microbistatic factors, such as addition of NaCl, and adjustment of pH and water activity (aw)) in the manufacture of shelf-stable foods is considered.
