Healthy, surface-sterilized tomato fruits, inoculated with A. alternata, were exposed to various concn of SO2 inside closed-top fumigation chambers and assayed at intervals for extracellular enzymes. A gradual increase in the pH of the extract was associated with inhibition of cellulase, amylase, protease and pectolytic enzymes. C. 60% of disease was arrested at 25 p.p.m. SO2, while c. 50% inhibition was noticed in protease, cellulase and pectin methyl transeliminase production.
