The 10 improved varieties assessed had improved protein and mineral contents compared with local varieties. The protein content ranged from 21.5 to 27.0%, whilst that of iron ranged from 8 to 15 mg per 100 g sample. Concentrations of calcium ranged from 13.5 to 20.8 mg per 100g sample. Soaking time ranged between 300 and 590 min and cooking time between 40 and 90 min; varieties which showed higher soaking time also required longer cooking.
