Glycoalkaloids in potatoes - shedding light on an important problem

, : Glycoalkaloids in potatoes - shedding light on an important problem. Aspects of Applied Biology ( 33): 221-227

Tubers of 6 commercially available potato cultivars were placed in bright light (10 000 lux), approximately equivalent to daylight, for a continuous period of 7 d. The tubers were sampled at intervals, scored for degree of greening, freeze-dried and subsequently assessed for glycoalkaloid and chlorophyll contents. There were significant differences between the cultivars for their rates of increase of both greening and glycoalkaloid content.
