Heavy metal content in cereals and bread supply in old and new (German) federal states

, : Heavy metal content in cereals and bread supply in old and new (German) federal states. Kongressband 1993 Hamburg Vortrage zum Generalthema des 105 VDLUFA Kongresses vom 20-2591993 in Hamburg: QualitaUt und Hygiene von Lebensmitteln in Produktion und Verarbeitung: 157-160

Since 1990, monitoring of toxic substances in homegrown cereals such as wheat and rye via representative samples in the special annual harvest surveys has been extended to the new federal states of Germany. A comparison with results over 15 years from the old federal states shows that average contents of lead and cadmium have not changed after reunification. Different federal states show varying average heavy metal contents in cereals intended for bread.
