The biosynthesis of anthocyanins in apples and pears is reviewed. The main anthocyanin in pome fruits is cyanidin 3-galactoside. Anthocyanins are located in the vacuoles of epidermal and sub-epidermal cells. These pigments belong to the flavonoids and strongly absorb visible light, giving rise to a variety of colours. Only 6 of the ~22 known anthocyanidins contribute to the pigmentation of plant organs. The magenta coloured cyanidin is the most common of the 6 aglycones.
