Total fats (TF) and total proteins (TP) were estimated in samples of milk collected monthly between 1989 and 1991 from 1536 Bordaleira Serra da Estrela ewes from 36 randomly selected herds in the demarcated region for the manufacture of Serra da Estrela cheese, Portugal. The effect of environmental factors on milk composition was estimated by least squares analysis of variance using a fixed model for each milk test-day.
