Liquid jaggery is an intermediate product in making jaggery in Indian dialects it is known as kakavi, kaakavi and golnupa, and is sold as kakvi by Anilkumar Products. Fully mature cane (juice Brix constant and >=19) is needed to make kakavi of good quality, otherwise the product is dark and its shelf-life is short. An account is given of its processing into kakavi.
