The degradation of quercetin-3-rhamnoglucoside (rutin), naringenin-7-rhamnoglucoside (naringin) and hesperetin-7-rhamnoglucoside (hesperidin) and their related aglycones by human faecal flora was examined in an in vitro fermentation system. HPLC and mass spectrometry were used to follow the process of degradation. Within 48 h all 3 rhamnoglucoside substrates had been degraded by faecal flora.
