The productive parameters of rainbow trout fed 100% fish meal (FM) or 100% plant protein (PP) diets was evaluated. The feeding trial lasted for 160 days, after which the fish were slaughtered and processed. It was shown that PP fish had a lower dressing percentage due to higher visceral index and perivisceral fat and a lower hepatosomatic index. Immediately and 24 h after death, muscle pH was similar in both groups. There were no differences in average water holding capacity during storage.
