This study was conducted to evaluate the changes in electrical conductivity (EC) of longissimus dorsi muscle (ldm) depending on whether the muscle constituted part of the carcass and treated as a cut from it or was examined as a separate muscle excised from the loin. Measurements were taken at different periods after slaughter and were accompanied by the assessment of pH value, drip loss and centrifugal drip. The experimental material comprised 107 fatteners, 110+or-10.93 kg.
