Members of the large group of alkylpyrazines are considered to be key food odourants in raw and heated food. Using a fluorescence imaging plate reader system, we screened 96 mouse olfactory receptor chimaeras expressed in a human cell line for intracellular calcium signals by application of the key food odourant 2,3-diethyl-5-methylpyrazine. We identified one responding receptor.
