Anthocyanin synthesis in apples depends mainly on red light (especially 650 nm, possibly acting on phytochrome) and ultraviolet light (280-320 nm, working on a possible UV-B receptor). Anthocyanin synthesis is positively affected by a temperature of 15-20 degrees C. The effectiveness of both light and temperature varies with cultivar and maturity stage. The activities of PAL (phenylalanine ammonia-lyase) relate to the amount of anthocyanin in early maturing apples.
