Latex containing papain was extracted from 70- to 100-day-old fruits of pawpaw Co-2 by tapping 4 or 6 times on the fruit. Latex was subsequently collected from the same fruit at 4- and 7-day intervals. The scarred fruits were then utilized for tuti-fruity production using small, uniform cubes of 1 or 2 cm treated with 15, 20 or 25% salt solution for 15 days before cooking in sugar solution for 15, 30 or 45 minutes. Latex yield decreased with successive tapping.
