This paper presents an overview of aspects important to commercial application of fresh cut horticultural and agricultural produce, how to acquire the proper information, and how (and to what extent) to trust your partner in the chain concept. The difference between manufacturing approach and user-based or perceived quality is discussed, as well as keeping quality as applied by commercial companies in the sector of cutting vegetables.
