The aim of this study was to determine which of the 3 popular carbohydrate-rich foods has the highest potential to increase postprandial triacylglycerol (TAG) levels in patients with type 2 diabetes mellitus (T2DM) and in healthy non-diabetic subjects from Trinidad and Tobago All subjects were studied on 3 different occasions 7 days apart after an overnight fasting. On each day of the study, anthropometric indices (waist and hip circumference, weight, and height) were measured.
