This chapter focuses on the potential for a meal to influence the gastrointestinal (GI) absorption of drugs, which depends on the physicochemical properties of drugs and dosage forms and on the meal effects on GI physiology. Drug properties and the rate of dosage form release of drug into solution in the GI tract define rate-limiting steps in the drug absorption process. Drug dissolution, intestinal permeability, and gastric emptying determine the rate of absorption.
