The flow characteristics of high pressure treated solutions of guar gum, sodium carboxymethylcellulose (CMC), or xanthan gum in skim milk were investigated for polysaccharide concentrations in the range of 0.5-2.0 g/l and high pressures in the range of 200-800 MPa. The data was fitted to a power law model. Consistency index of solutions increased with increasing treatment pressure and increasing polysaccharide concentration.
