This chapter focuses on the application of probiotic bacteria for food safety purposes. The antibacterial properties of Bifidobacterium spp., Lactobacillus spp. (including bacteriocin-producing species), and other bacteriocin-producing lactic acid bacteria (LAB), and their potential use as food preservatives, are discussed.
