The rediscovery of hulled wheat

The phylogeny of cultivated wheats, and the domestication and early use of the hulled wheats Triticum dicoccum (known in Italy as farro), T. monococcum (piccolo farro) and T. spelta (gran farro) are discussed. Landraces of these species continue to be cultivated in various regions of Italy, with the largest acreages of farro in Umbria (250-300 ha), Molise, Marche and Tuscany (each with 150-200 ha).
