The work on the semi-technical plant leads to the development of a simple procedure for yeast fermentation of whey using mixed cultures of lactic acid bacteria and lactic acid assimilating yeasts. The enzymatic degradation of whey proteins by yeast proteinases and peptidases replaces the normal heat coagulation. In the technical experiment it was possible to reduce the biological O2 demand by 95% in the most favorable case. Laboratory trials indicate that it is possible to extend this procedure to other dairy substrates such as ultrafiltrates, lactose residue, dialysate. By the round-about way of lactic acid fermentation, whey may be used as a substrate for the production of Saccharomyces cerevisiae. The dry yeast produced in the semi-technical plant proved to have good qualities in animal feeding trials.
