The freezing and thawing in live and fully cold-hardened crowns of winter rye (S. cereale L.) can be described by 2 rate constants. The rates of freezing and thawing of the major fraction of tissue water increased sharply when the crowns were cooled below their killing temperature, C. The measurements, all made below C, suggest that the changes in the plasma membrane water permeability are associated with the frost damage and occur without fully thawing the tissue.
