Fungal flora associated with Ammi majus fruits and their deteriorative effects on coumarins in fruits during storage have been investigated. Isolation trials showed the presence of different fungi. Penicillium sp. occurred in highest frequency followed by Fusarium oxysporum, Aspergillus niger, A. flavus, A. ochraceus and A. versicolor. The five tested fungi were able to attack and degrade xanthotoxin, imperatorin, and bergapten in the fruits causing different rates of loss. As the storage period prolonged, the percentage loss of coumarins increased. Concerning xanthotoxin, A. ochraceus caused a rapid damage within the first month, while, A. niger, A. flavus and F. oxysporum caused a slight damage during the first three months then drastically reduced xanthotoxin content. Concerning imperatorin, Penicilluium sp. caused a slight decreased of imperatorin content in fruits, while F. oxysporum followed by A. ochraceus caused severe losses. Concerning bergapten, A. ochraceus caused a rapid damage during the first month, while, Penicillium sp. caused slightest effect on bergapten content during storage.
