It was determined the effect of thermic treatment over the consistency of yoghurt by means the application of a factorial plan 22 continued by a quadratic design 32 where the independents variables were the temperature and the pasteurization time and the dependent variable was the consistency. The range of the temperature studied was from 80 to 95.degree. C and the retention time was from 10 to 30 minutes. According with our results it is possible to secure that the increasing of retention time had a negative influence over the consistency beginning with 85.degree. C. The pasteurization conditions for obtaining the maximum of consistency were 85.degree. C during 10 minutes. These results imply a sustantial save of energy inasmuch as in our country it is established the temperature of 95.degree. C with a retention time from 20 to 30 minutes.
