Without O2, root tissues of Cichorium intybus suffer from fermentation. Ethanol evaporates into the atmosphere or diffuses in culture medium. From a certain level this alcohol delays the explant development by inhibition of protein formation. It delays and even suppresses bud growth when it is still present before the end of the culture. To a certain extent, ethanol can also slow down leaf growth. Root tissues of C. intybus can produce buds on their own reserves. In presence of glucids in culture medium tissue proliferation is stimulated at the expense of organogenesis without favoring leaf growth. When deproved of O2, tissues use their own reserves preferably to glucids of the nutrient medium. Products formed by the anaerobic metabolism create favorable conditions for bud neoformation. These conditions, to a certain extent, make up for inhibition caused by an excess of glucids in the nutrient medium. Accumulated ethyl alcohol during anaerobiosis is transformed by tissues that are oxygenated again; Acetaldehyde is formed owing to alcohol - dehydrogenase. Being volatile, acetaldehyde is partially rejected into the atmosphere; it is also used in the formation of ethylene. The latter acts on the tissues by stimulating bud neoformation and by reducing the quantity of further foliar pigments.
