The presence of Aeromonas spp. Aerobic mesophiles and Total Enterobacteriaceae had been determined in 60 samples of ice-cream (strawberry, vanilla, chocolate and Malaga with raisins) collected in stores of public sale in Santa Cruz de Tenerife. In none of the samples Aeromonas spp. was isolated. The counting of Aerobic mesophiles, using simultaneously PCA and TSB supplemented with yeast extract and agar, had exceeded in a 33.33% and a 29.17%, respectively, the maximum values established by the Spanish Norm for pasteurized ice-cream. The differences observed in this countings with both mediums are not significative. The enumeration of Total Enterobacteriaceae using violet-red-bile-glucose agar and incubation at and C for 24 hours, is situated in the range of 1.103-1.105 cfu/g. The 75% of the samples, when incubated at C, and the 76.67% when the incubation was at C. In any case, the differences observed in the countings using one or another temperature of incubation were not significative.
