Alimentaria 40(346): 35-39

The influence of subculture temperature (37, 40, 45, 50, 55 and 60degreeC) on the recovery rates of heat injured spores of Bacillus stearothermophilus (ATCC 12980) was investigated. Spores were obtained at different temperatures (45, 53 and 60degreeC). The highest recovery rates of heat injured spores were obtained by subculturing at 55degreeC for spores formed at 53 and 60degreeC and at 50degreeC for those obtained at 45degreeC.
