In determinate areas of food process, the ultraviolet light application has begun to use as a sterilisation process instead of traditional methods. In this work, the ultraviolet light killer effect has been evaluated with different undesirable microorganisms associated with grape must. Grape must was exposed to ultraviolet light effect (lambda=260) and samples was taken 0, 5, 10, 15 and 20 minutes after the ultraviolet light was begun to be applied.
