The numbers of points given for flavour when butters were graded were compared with the results of various chemical tests proposed as measures of flavour. Tests included estimations of steam-volatile acids and steam-volatile esters, pH of a steam distillate, colorimetric estimation of methylnonylketone inmolten butter before and after filtration, reduction of permanganate by a distillate, and numerous other procedures.
