In the growth phase, the yeast Rhodotorula gracilis forms protein, for which it needs a sub strate of invert sugar, ammonium sulfate as source of N, and P supplied as K2HPO4. In the ensuing phase, when most of the N has been used up, fat is formed; for this ample supplies of sugar are required, with only small quantities of P. During both phases heavy aeration is needed. Addition of the B vitamins doubled the rate of growth.
