Application of a plastic emulsion (e.g. polyvinyl-acetate, polyacrylic ester) to the surface of fresh Gouda cheese as an alternative to treatment with linseed oil has been examined. There was slightly less loss of weight than in the oiled cheese during the ripening period but subsequent removal of the adhering plastic tended to damage the coat.
