In trials with 15 infants of average age 57 days, mother's milk, cow's milk and cow's milk with 70% of the fat replaced by maize oil were compared. When infants were given mother's milk for a week after a week on the maize oil mixture serum cholesterol rose by 23, phospholipids by 14 and iodine number by 15%. When cow's milk followed the maize oil mixture only cholesterol rose, by 15%; phospholipids and iodine number remained the same.
