Some factors influencing shrinkage of mushrooms during processing


, : Some factors influencing shrinkage of mushrooms during processing. Mushroom Sci. 5: 547-57

Shrinkage of mushrooms during canning operations was shown to be influenced by the strain of spawn from which the crop was grown, storage of the fresh product before processing, blanch time, the medium in which mushrooms were canned, and handling of the product between blanching and can-filling operations. Product shrinkage was not influenced by maturity of button mushrooms at time of harvest.
