In an animal fed a diet in which normal tissue cholesterol levels are maintained, appreciable quantities of essential fatty acids occur in combination with cholesterol. In the absence of essential fatty acids, the cholesterol esterified with more saturated fatty acids; as a result, abnormalities occur in the metabolism of cholesterol, as judged by elevations in tissue cholesterol levels. The increase in the liver cholesterol content of fat-deficient rats is mainly in the ester fraction; the increase is particularly apparent in those animals fed a diet containing either no fat, or fat which is relatively deficient in essential fatty acids. The regulation of normal cholesterol levels in the rat liver is dependent on the presence of essential fatty acids in the dietary fat, and, evidently, on the maintenance of a proper ratio between saturated and essential fatty acid as well.
