Respiration of plucked leaves declined during storage to a minimum after 48 hours. Peroxidase and poly-phenoloxidase activity increased to a maximum after 24 to 48 hours' storage and subsequently declined. Total sugars had largely decomposed after 48 hours' storage. Oxidized tannin products and gallic acid accumulated during storage, the change being particularly marked in conditions of high temperature and low humidity.
