This is a study of the post-war (1947-56 inclusive) cream market in the U.S.A. with special reference to Connecticut. In 1956 the weekly average per capita consumption of light cream was 0.31 half-pints in the U.S.A. and 0.39 in Connecticut. Consumption of cream relative to milk declined 21% in the U.S.A. between 1947-48 and 1955-56 and 10% in Connecticut during the same period.
