Tank milk and butter quality

43 parallel churnings of ripened cream butter were made over a 10.month period at a butter factory in Norrkoping from (i) milk collected daily in cans and (ii) milk collected every other day from farm bulk tanks. Data are presented on the bacteriological quality, iodine and peroxide values, Cu content, free fatty acid and diacetyl contents and flavour of the fresh butter as well as of prints stored for 10 and 20 days at 14 degrees C and for 3 months in a cold store.
