A preliminary estimate for 1968 puts the total milk production in Ontario at 6641 million lb or about the same quantity as that produced in 1967. In 1968, the per caput consumption of liquid milk which continued its decline was 286.7 lb in Ontario vs. 247.3 lb in Canada; the decline is associated with a marked shift in consumer preference from standard milk to partly skimmed milk. The downward trend in the consumption of creamery butter and evaporated whole milk continues.
