The leucoanthocyanins in white grapes: their distribution, amount, and fate during fermentation

, : The leucoanthocyanins in white grapes: their distribution, amount, and fate during fermentation. Amer. J. Enol. Vitic, 15: 146-53. bibl. 19

The leucoanthocyanin content was correlated with that of tannin and the stability of the wine produced; it varied with the variety, but was highest in immature grapes. Seeds and stems contained most leucoanthocyanins, but skins and pulp, being softer tissues, released them more easily.
