In continuation of earlier work on Lactobacillus plantarum + Streptococcus diacetilactis symbiotic butter starters (see DSA 30 &), it was found that addition of Str. cremoris as a 3rd starter component increased lactic acid formation without impairing the aroma-producing properties of the starter. Best results were obtained by culturing the starter (proportions of components not stated) at 25-28 degrees C in skim-milk (16% TS) supplemented with mineral salts, yeast autolysate and glucose.
