Versatile apparatus for controlling acidity of dairy products

, : Versatile apparatus for controlling acidity of dairy products. Moloch. Prom, 31: 3, 11-14

The pH of dairy products is virtually independent of temp, around pH 4.25, and within the temp, range 5-35 degrees C. Around this value it is only necessary to compensate in the instrument for the effect of temp, on the response of the electrodes. The design and performance of a sensitive pH meter of Russian manufacture are described.
