Twenty-nine vegetable and leguminous Mexican foods were cooked (1) by boiling at environmental pressure (580 mm in Mexico City), and (2) under pressure (121[degree] C) in an autoclave. Vitamin determinations were made of cooked and uncooked foods, and of cooking water. Foods cooked by method 2 with small amounts of water retained larger amounts of vitamins than those cooked by method 1 and with larger volumes of water. Amounts of vitamins in the cooking water were proportional to surface-volume ratios of cooked foods.
