In reconstituted lemon juice concentrate, and in fresh juice from coastal and desert lemons and others grown in Italy, respectively, average total carotenoid estimated spectrophotometrically was 49, 50, 40 and 45 micro g beta -carotene per 100 ml, and sterol from precipitate with digitonin was equivalent to 8.28, 8.99, 9.10 and 8.46 mg beta -sitosterol per 100 ml; this was the main sterol. Relation between citric acid, carotenoids and steroids was low.
