The growth responses of S. lactis, as judged by changes in the pH values and microscopic examinations, were studied in samples of milk drawn from the infected and non-infected udder-quarters of cows suffering from mastitis. Milk with an initial pH value > 6.9 usually failed to support pood growth of S. lactis; normal milk from the other udder-quarters gave normal acid development. The growth responses of S. lactis varied somewhat in the milk drawn from the 3 cows under study. Adjusting the pH of mastitis milk to that of normal milk only partially overcame delayed acid development. Mastitis milk so treated changed little in pH value until after 15-20 hrs.; thereafter, acid development was rapid. Addition of as little as 10% of very abnormal mastitis milk to normal milk retarded S. lactis development. Pasteurizing some samples of mastitis milk at 65.5[degree] C for 30 min. tended partially to overcome the retarding influence on the growth of S. lactis; with most of the samples studied, heat treatment at these temps. had little or no effect.
