, : Observations on the individuality of yeast maltases. Archives of Biochemistry and Biophysics 69: 1-9

Paper chromatography has revealed that whereas both maltose and maltotriose were rapidly attacked by enzymic preparations from Saccharomyces cerevisiae, only maltose was hydrolyzed when similar extracts from Saccharomyces uvarum were employed. Fractional precipitation, adsorption chromatography, and electrophoresis of extracts from S. cerevisiae indicated that a single enzyme is concerned with the hydrolysis of both maltotriose and maltose. This view was confirmed by examining the effects of a crude extract of the yeast on maltose and maltotriose both separately and as a mixture.
