A method for the detn. and study of phosphatase activity in malt is descr. The method is an adaptation of the Gilcreas-Davis phosphatase test used in determining the efficiency of the pasteurization of milk. The reliability of the test is demonstrated. No great difference in phosphatase content in different types of malt was shown. Phosphatase in green malt develops rapidly up to the 4th day, thereafter the increase is slight. Variations in kilning temp. do not materially affect the activity.
