, : The quantity and size distribution of stone cell particles in pear varieties. Proc Amer Soc Hort Sci 78: 59-64

An analytical procedure for determination of stone cell particles in pear puree has been developed. Pear puree is treated with 5% NaOH followed by treatment with 60% H2SO4. Stone cell particles are then washed, dried, and separated with standard screens. Detailed instructions are given. Correlation between the objective determinations and taste panel evaluations was obtained by assigning weighted values to the larger stone cell particles. Results are given on 9 varieties of pears.
