The authors present evidence that barley amylase is an enzyme (saccharogenamylase) which is identical with malt amylase, after admixt. to the former of another enzyme (dextrinogenamylase). A fraction of the insol. barley amylase is present in a latent condition. The activation of the latter is a pro-teolytic process. No activator is involved. Dextrinogenamylase is neither formed nor activated during water or papain autolysis. Either it or an activator is formed during germination.
