, : A new colorimetric method for the determination of starch applied to soluble starch, natural starches, and flour. Mikrochem 26(1/2): 132-142

Soluble starch and the insoluble starch of rice, maize, wheat and potato, purified and in plant material were analysed. The starch was gelatinized by 0.7% alkali, neutralized with acetic acid, and the starch iodide color developed by slow oxidation of KI with 3% H2O2. Starch-iodide complex formed slowly and stayed in colloidal form suitable for colorimetric comparison with standards. Excess I was removed by chloroform extraction. Amts of 0.5-1 mg. were estimated with 2 or 3% error.
